Dr. Fosu joined Rockhurst University in 2025. He received his Ph.D. in Economics from Southern Illinois University, an M.S. in Agribusiness and Applied Economics from North Dakota State University, and an M.Phil. and B.A. in Economics from the University of Cape Coast, Ghana. 

Prior to joining Rockhurst, Dr. Fosu worked as a Visiting Assistant Professor at Marquette University and an Assistant Professor at Wheeling University. His current research focuses on economic development, macroeconomics, and applied economics. He currently teaches Principles of Macroeconomics, Intermediate Microeconomics, Intermediate Macroeconomics, Economics of the Developing World, and International Finance. 

In his spare time, he enjoys watching soccer and taking walks with his children.
